Ingredients
These are the ingredients to make a basic tortilla quiche. See below for variations and ideas on using up other leftovers. For 12 mini torilla quiches, you will need 3 tortilla wraps.

- Tortilla wraps: Use any tortilla wraps including gluten free if needed.
- Eggs: Larger eggs may need slightly longer cooking time.
- Cheese: Grated cheddar cheese or other hard cheese.
- Milk: I've used milk for the filling, but you can leave it out.
How to make a Tortilla Quiche
You will need a round oven proof dish. I use one 23cm / 9 inches in diameter

Step 1: Prep Dish
Pre-heat the oven to 200°C/180°C(fan)/400°F/Gas 6. Lightly oil a round ovenproof dish and press your tortilla into it.

Step 2: Whisk
Whisk you eggs in a bowl and add all your other ingredients

Step 3: Fill
Pour your egg mixture into your tortilla, leaving a little room at the top.

Step 4: Bake
Bake for 20 - 25 minutes until the egg mixture has set. Remove from the oven and leave to rest for 5 minutes.
Pro Tip
Larger eggs may need a longer cooking time. Bake until your egg mixture has set.

How to make Mini Tortilla Quiche
Mini tortilla quiches are perfect for lunchboxes. This recipe makes 12. You will need 3 tortilla wraps cut into quarters.

Step 1: Prep and Fill
Cut a large tortilla wrap into quarters. Lightly grease your muffin tray and press the tortilla into the holes. It doesn't need to be neat. Spoon in the egg and cheese mixture and add in any extra toppings.

Step 2: Bake
Bake at 200°C/180°C(fan)/400°F/Gas 6 for 15 - 18 minutes. Remove and leave to rest for 5 - 10 minutes. Remove from the muffin tray and place on a cooling rack.

Common Quiche Filling Ideas
If you need some inspiration, these are some common quiche flavour combinations. Use this as a guide to help you use up your leftovers.
- Quiche Lorraine: bacon, cheese and sometimes fried onions.
- Cheese and onion.
- Broccoli and cheddar.
- Mushroom, cheese and spinach.
- Asparagus, goats cheese and ham.
- Asparagus, leeks, onion.
- Leek and ricotta.
- Smoked salmon, asparagus and/or spinach.
- Roasted mediterranean vegetables, feta or goats cheese and spinach.
- Goats cheese, black olives, fig, red onion, watercress.
- Butternut squash, sage and hazelnut.
Leftover Filling Ideas
You can add a wide range of ingredients to the basic egg and cheese mixture. Make sure all meats are cooked.
Cooked Meat & Fish
- Chicken or turkey pieces.
- Bacon, pancetta or salami.
- Ham, leftover gammon, pulled pork.
- Smoked salmon.
Veg
Some vegetables need cooking before adding to your tortilla quiche as they release water that will make your quiche soggy.
- Bell peppers.
- Grated carrot.
- Leftover greens such as spinach and kale.
- Tenderstem broccoli (steamed).
- Spring onions (raw or fried).
- Mushrooms (cook before adding).
- Tomatoes. Cherry or baby tomatoes or sun-dried tomatoes.
- Leeks (fried or steamed).
- Asparagus (steamed).
- Onions (fried).
- Butternut squash (roasted).
Cheese
You can use almost any cheese and don't be afraid to mix cheeses together if you've got more than one to use up. Grate or crumble all hard cheeses such as Cheddar, Stilton, Parmesan or Montery Jack. You can also add in soft cheese such as goats cheese, feta cheese or mozarella. Cut soft cheeses into small cubes.
Other
As well as meats, fish, vegetables and cheeses, you can also add in some of the following:
- Figs: Pair well with goats cheese
- Ricotta cheese: Stir through for extra creaminess
- Spoonful of cottage cheese. Adds creaminess and extra protein.
- Olives: Black or green olives go well and add saltiness.

Storage and Reheating
You can store your baked tortilla quiche in the following ways.
- Fridge: for 4 - 5 days in an airtight container.
- Freezer: Tortilla quiche doesn't freeze well as it's delicate and goes a bit soggy when frozen.
- Reheat: pop it in the oven for 5 -10 minutes. Cover loosely with foil to prevent the top browning further. Reheat in an air fryer for 8 - 10 minutes or microwave until the centre is piping hot.
If you've used leftover meat in your tortilla quiche, remember you should only reheat it once for safety.
