Add the olive oil to the pan over a medium heat and fry the spring onions for 2 minutes. Add the garlic and fry for a further 30 seconds.

Add the fresh tomatoes to the pan and simmer for 5 minutes

Stir the flour into the prawns (optional) and add them to the pan. Stir into the tomatoes. Leave out the flour or use cornflour for a gluten free recipe.
350 g prawns, 2 tablespoon plain flour
Season with salt and pepper and stir in the tomato puree and Tabasco sauce. Taste to see if the sauce is spicy enough. Add the coriander and most of the parsley.
Simmer the sauce for 6-7 minutes and serve with pasta rice or crusty bread. Add a tablespoon of creme fraiche over the top. Sprinkle with the remaining parsley.

Notes
Prawns - The best prawns or shrimp to use are large peeled and cooked ones. Don't be tempted to overcook the prawns as they can go a bit rubbery in texture if cooked for a long time.
Tomatoes - If possible use fresh tomatoes rather than tinned ones. You can of course use tinned or canned tomatoes if you need to.
Herbs -Using fresh herbs really enhances the flavour. If using dried herbs, then use one teaspoon of dried herbs for every tablespoon of fresh herbs.
Tabasco Sauce - Tabasco sauce is a hot sauce made from chilli peppers. The strength can increase the longer you've had the bottle. Add just a teaspoon to start with.
Reheating prawns
Prawns can be re-heated provided they have been stored properly. Once cooked, they should be stored in a refrigerator within two hours. Ideally, you should not leave seafood at room temperature for any longer than necessary. When re-heating prawns, make sure they are piping hot. Reheat them in a microwave or on a hob or stovetop or in the oven.
How to Serve
Serve with pasta, rice or crusty bread. A spoonful of creme fraiche on the top adds a nice creaminess.
Storage
Prawns like other seafood should not be left out at room temperature. Store this Prawn dish in the fridge for 1 - 2 days. Enjoy cold the next day for lunch or you can reheat it. When reheating, make sure it is piping hot before serving. Cooked prawns should not be refrozen.
