Frittata is a great dish for lunch or dinner. The feta gives it great flavour and it's andgreat way to enjoy Jersey Royals when they're in season. Serve with some asparagus for a great seasonal dish.
Bring a large pan of lightly salted water to the boil. Add the potato slices and cook for 5 minutes until tender. Add the peas after 2 minutes. Remove with a slotted spoon.
Heat the olive oil in a frying pan and gently fry the spring onions until softened, about 3 minutes.
Add the potato and peas to the pan and spread out evenly.
Pre-heat the grill to medium.
In a large bowl, whisk the eggs with the milk and add the chopped mint and feta and season with salt and pepper. Pour over the potatoes and peas in the frying pan. Cook for 3 - 4 minutes on the hob until almost set. Finish off under the grill for a few minutes.
Whilst the frittata is cooking, add the asparagus spears to the water and cook for around 5 minutes until tender.
Cut the frittata into wedges and serve with the asparagus.
