Ingredients
Yes, these Banana and Peanut Butter brownies need just 3 ingredients!
- Bananas - overripe bananas are easiest to mash and have a sweeter flavour than ones that are just ripe.
- Peanut Butter - I recommend using peanut butter that is made 100% from peanuts if possible. Some brands have other oils, fats, or sugars mixed in. These kinds of peanut butter won't have the same consistency and are more difficult to mix. You can use crunchy peanut butter if you like.
- Cocoa powder - also known as chocolate powder or cacao powder. This is a concentrated unsweetened chocolate powder made from roasted and ground cocoa beans.
See recipe card for quantities.
Instructions
Making these banana brownies with an electric whisk gives a nice smooth consistency. If you don't have a whisk, you can use a fork. Take time to mash the bananas as much as you can before adding the peanut butter and cocoa powder.
Mash the bananas together in a bowl.
Add the peanut butter and cocoa powder and whisk together until you have a smooth paste. An electric hand whisk is ideal for this.
Line a baking dish with greaseproof or parchment paper. Tip the mixture in and level it out with the back of a spoon.
You can add chocolate chips to the top if you like. Cook on the middle shelf of the oven at 180C / 360F for 20 - 25 minutes.
Remove it from the oven and leave it to cool.
Once cooled, slice it into squares.
Top Tip
Leave the banana brownies to cool properly before slicing.
If your peanut butter is too hard to easily mix in, try warming it slightly on a low heat in a microwave.
Variations
I love that you can make these banana brownies with just 3 ingredients. However, you can also add a few extra ingredients if you want to add to the flavour.
- Milk or white chocolate chips. Stir through or sprinkle them over the top before baking.
- Dried cranberries or craisins
- Walnuts, hazelnuts or pistachios. Crush them first and stir through before baking.
- Seeds such as pumpkin seeds or sunflower seeds.
Substituting other butters
People often ask if you can use other kinds of butter instead of peanut butter.
The following nut butters work well. If the consistency is too thick and they are difficult to mix in, try warming them slightly in a microwave on a low heat to loosen them up.
- almond butter, cashew butter, hazelnut butter.
For nut-free butter, you can use sunflower seed butter.
Serving Suggestion
Banana and Peanut butter brownies are perfect for breakfast, lunchboxes, or as a snack. Serve them with fresh fruit such as strawberries or raspberries or with a scoop of ice cream.
Equipment
For this recipe, you will need the following
- A baking tray 20cm x 20cm or 8 inches x 8 inches.
- An electric hand whisk or a blender. You can also use a potato masher.
- Greaseproof or parchment paper or baking liners for the tray.
Sustainability
These banana and peanut butter brownies are a great way to use up overripe bananas and avoid food waste. Bananas are one of the most well-known products that are available as Fairtrade. Did you know you can also buy Fairtrade peanut butter and cocoa powder? The Fairtrade movement actively supports some of the poorest farmers in the world and pays a fair price for their produce. They also work to help farmers mitigate the impact of climate change and help them adapt to changing weather patterns.
Storage
Keep these no flour banana brownies in an airtight container for 3 -4 days or in the fridge for up to 5 days.
They also freeze well for up to 1 month.
Green Tip
Did you know that if you're not ready to use your overripe bananas, you can store them in the freezer until you have time to bake? Peel and slice them and store them in a single layer. Defrost thoroughly before using.
FAQ
As bananas ripen, the starch converts into sugar which is why overripe bananas taste sweeter. These peanut butter and banana brownies are a healthier version with no added refined sugars.
Different peanut butters have different consistencies. Pure peanut butter made from 100% peanuts and nothing else, will have a smooth and runnier consistency. Varieties with added oils, fats, and sugars will often be thicker. Try warming it slightly first before stirring in with the bananas.
There is no raising agent such as baking powder in these brownies and they will not rise in the way that ones made with flour do. They do however still have a nice fudgy texture.
